Low-sugar jam
Specify soluble solids, pH and calcium source. Compare gel strength and syneresis in the same recipe.
Cultured milk beverages
Select grades suited to the target system. After heating, compare flocculation, clear serum and mouthfeel.
| Form or grade | Suitability and verification |
|---|---|
| High-methoxyl pectin | Evaluate gel formation at the actual soluble solids and acidity. |
| Low-methoxyl pectin | Evaluate calcium ions, buffer system and target texture. |
| Amidated low-methoxyl | Compare calcium sensitivity, process tolerance and syneresis separately from conventional low-methoxyl pectin. |
Purchase specifications and incoming inspection
Include the intended grade or current specification in the enquiry. Use the table to compare selection criteria and inspection conditions. The specification agreed by both parties defines the contractual limits. ENVO product listing · Name and catalogue reference ↗
| Property | Unit | Published or agreed specification | Test conditions and checks |
|---|---|---|---|
| Degree of esterification | % | Request the degree of esterification (DE) range. | Specify high-methoxyl, low-methoxyl or amidated type and identify any standardising carrier. |
| Gel strength | Agreed texture method | Compare with the approved sample range. | Record concentration, gelling conditions, maturation time and probe. Compare results from different methods separately. |
| Effect of ions in the formulation | Formulation trial | Specify process water quality and background salts. | Prepare with the ion combination agreed by supplier and buyer and include a blank control. |
When approving a sample, record the grade, methods, limits and specification revision. On receipt, match the packing lot number to the lot-specific COA and record the measured values and release decision.
From samples to commercial delivery
Packaging and receiving
Request photographs of the proposed inner bag or container, unit weight and closure. Match the lot on the inner and outer packs.
Storage and handling
Distinguish grade and gel type on the label. Ask which sugars and buffer salts are used for standardisation.
Sample and order lead times
State food category, sales market, pilot quantity and required arrival date. Confirm MOQ, batch documents, availability and remaining shelf life separately for samples and commercial orders.
Questions from the plant
Why does the existing pectin fail to set a low-sugar recipe?
Provide soluble solids, pH and calcium source. Compare gel strength and syneresis in the same recipe.
Why did the original dose stop working after changing juice?
Compare soluble solids, pH and calcium in both juices. Run a dose series with the same pectin lot.
Report a delivery or batch issue
Include the order number, lot number from the package, label photos and inspection records for the affected lot. When retesting, check Degree of esterification, degree of amidation, applicable solids and calcium conditions.
Request documents for your application
TDS · Technical data sheet
For grade selection and sample approval, specify the grade and revision required.
SDS · Safety data sheet
Specify the country or region of use and the required language.
COA · Certificate of analysis
Request a sample COA during supplier review. For incoming inspection, provide the actual lot number.
