01 / Applications and trials

Plan a trial for your application

Heated sauces

In the same salt, sugar and acid system, compare cooked viscosity, texture after shear and stability on cooling.

Frozen prepared foods

Use the product’s actual freeze-thaw cycle. Compare syneresis, texture and performance on reheating.

02 / Quality and acceptance

Purchase specifications and incoming inspection

Use these properties to compare grades within the product family. Example figures refer to the cited grade or source. Confirm the offered specification, packaging and lead time in the quotation. WHO JECFA · Modified starch identity and modification classes ↗

Property Unit Published or agreed specification Test conditions and checks
Viscosity mPa·s or pasting profile Confirm against the offered grade and purchase specification Specify solids, shear conditions, temperature and instrument.
Source and modification type Specification statement Confirm against the offered grade and purchase specification Check botanical source, the specific modification and the market of use.
Freeze-thaw syneresis % by mass Confirm against the offered grade and purchase specification Use the same formulation, number of cycles and weighing method.

When approving a sample, record the grade, methods, limits and specification revision. On receipt, match the packing lot number to the lot-specific COA and record the measured values and release decision.

03 / Packaging and delivery

From samples to commercial delivery

Packaging and receiving

Require a food-contact liner, appropriate label and controls after opening. Specify allergen and origin declarations.

Storage and handling

Check grade and production lot at receipt. For damp lumps, reassess sieving and gelatinisation.

Sample and order lead times

State food category, sales market, pilot quantity and required arrival date. Confirm MOQ, batch documents, availability and remaining shelf life separately for samples and commercial orders.

04 / Troubleshooting

Questions from the plant

Can all modified starches use one additive designation?

Check the specific modification, accepted name and intended market. A family name does not determine the designation.

Can two starches with similar hot viscosity differ after cooking?

Track viscosity and syneresis through cooling, storage and reheating.

Report a delivery or batch issue

Include the order number, lot number from the package, label photos and inspection records for the affected lot. When retesting, check Viscosity, Source and modification type, Freeze-thaw syneresis.
