Sweetness adjustment in baking
Hold formulation dry matter and heat treatment fixed. Compare color and finished moisture.
Crystalline fructose dissolution
Hold water temperature and agitation fixed. Time dissolution to clarity and check for crystallization on cooling.
Purchase specifications and incoming inspection
Include the intended grade or current specification in the enquiry. Use the table to compare selection criteria and inspection conditions. The specification agreed by both parties defines the contractual limits. ENVO product listing · Name and catalogue reference ↗
| Property | Unit | Published or agreed specification | Test conditions and checks |
|---|---|---|---|
| Sugar profile | % on a dry basis | Request lot values for fructose and glucose. | Specify dry matter and the analytical basis. Syrup solids do not establish fructose purity. |
| Moisture | % by mass | Agree for the specific grade | Specify the water test, sampling and sealing conditions. Interpret water content and loss on drying separately. |
| Color stability | Color difference or color value | Agree the comparison conditions with the retained sample. | Use the actual contact medium, packaging and thermal history to distinguish inherent colour from changes during processing. |
When approving a sample, record the grade, methods, limits and specification revision. On receipt, match the packing lot number to the lot-specific COA and record the measured values and release decision.
Chemical identity
| Database entry | Molecular or composition formula | Molar mass |
|---|---|---|
| D-Fructose | C6H12O6 | 180.16 g/mol |
The values refer to the compound indicated. Confirm hydrate form, solution concentration and blend composition for the commercial grade.
From samples to commercial delivery
Packaging and receiving
Request photographs of the proposed inner bag or container, unit weight and closure. Match the lot on the inner and outer packs.
Storage and handling
For crystals, check seals, particles and caking. For liquids, specify solids and receiving tank conditions separately.
Sample and order lead times
State food category, sales market, pilot quantity and required arrival date. Confirm MOQ, batch documents, availability and remaining shelf life separately for samples and commercial orders.
Questions from the plant
Why did sweetness, moisture retention or browning change after substitution?
Keep recipe dry matter and heat treatment constant. Compare colour and final moisture.
Does browning establish that the incoming fructose was discoloured?
Retain powder, blend and baked samples separately. Compare colour differences at the same heat load.
Report a delivery or batch issue
Include the order number, lot number from the package, label photos and inspection records for the affected lot. When retesting, check dry-basis fructose fraction, reducing sugar profile, Form supplied.
Request documents for your application
