Set up the comparison

Compare lactic acid lots at equal active acid in the same buffered base. Record pH and sensory results before and after the production heat cycle.

Measurements to record

Optical purity (%). Specify how L and D are defined and measured. Report total acid separately. Titratable acidity (As the specified acid). Record titration endpoint, sample concentration and conversion basis. Report pH separately. Record the sample ID and method revision for repeat testing.

Interpreting the results

Before attributing an endpoint difference to the lot, verify concentration, actual mass weighed and the buffering ingredients.

What to record

  • Active concentration
  • Dose
  • Heat history
  • Base
  • Final pH
