Set up the comparison

Calculate the added elemental potassium for each batch before evaluating the changed buffer system. Test in the existing formulation.

Measurements to record

Elemental potassium (% as received). Confirm hydration state, calculate potassium per serving and verify the finished-product analysis. pH of specified solution (Dimensionless). Specify solution concentration, water quality and measurement temperature. Record finished-food pH separately. Record the sample ID and method revision for repeat testing.

Interpreting the results

Record pH, sensory response and ionic contribution separately. Equal weights of sodium and potassium salts do not establish equal buffering behaviour.

What to record

  • Elemental potassium
  • Mass weighed
  • Original buffer
  • pH
