Trial design and interpretation

Take samples at fixed intervals from the same addition and measure residual particles using the same sieve and rinsing conditions. If residue drops substantially with longer hydration, adjust dispersion before changing viscosity grade.

Recording Degree of substitution

Degree of substitution (Dimensionless): JECFA monograph identity range: 0.20–1.50. The range describes substance identity. Agree the target grade range and viscosity under specified conditions in the contract. Viscosity under specified conditions: use the agreed method. Fix solution concentration, temperature, hydration time, instrument and rotational speed.

Why does the screen block on scale-up when the bench sample is smooth?

Sieve samples at several times after addition using the same aperture. Distinguish poor initial wetting from excessive final viscosity. Stabilization of acidic beverages: Hydrate fully at actual pH and salt concentration. Compare viscosity, settling and mouthfeel.

What to record

  • Addition method
  • Hydration time
