Trial design and interpretation

Correct dry matter addition for sample moisture, then fix the dissolution procedure, cooling conditions and gel testing time. If the lots still differ, record specimen geometry and probe to ensure the methods are comparable.

Recording Water-insoluble matter

Water-insoluble matter (%): ENVO published specification ≤1.0%. For incoming checks, confirm dissolution temperature and the filtration and weighing method. Moisture (% by mass): ENVO published specification ≤15.0%. State the moisture method for the same lot. Prepare comparison gels at equal dry-solids concentration.

Why does the same powder addition give different gel hardness?

Measure moisture and record evaporation during cooking. Retest at equal dry solids and maturation time. Gelled desserts: Hold sugar, acid, heating cycle and cooling time constant. Record texture and syneresis.

What to record

  • Dry matter mass
  • Dissolution procedure
  • Cooling time
  • Gel hardness
