Set up the comparison

Retain the existing acid blend as a blinded control. Match titratable acidity before evaluating the onset and persistence of sourness in the finished base.

Measurements to record

Malic acid assay (% by mass). Verify total content and stereochemistry separately. Review the results for related organic acids. Configuration or optical purity (Identification or %). Specify the chiral method or optical rotation conditions. Report total chemical assay separately. Record the sample ID and method revision for repeat testing.

Interpreting the results

Keep pH, titratable acidity and sensory scores separate. None can substitute for all the others in the flavour assessment.

What to record

  • Blend ratio
  • Titratable acidity
  • pH
  • Initial sourness
  • Aftertaste
