Set up the comparison
Keep the batter or dough, temperature and other leavening agents constant. Observe mixing, resting and baking separately to distinguish early from late gas release.
Measurements to record
Reaction rate (% gas released at the agreed time). Hold batter temperature, mixing time and gas-measurement time constant. Use data for the specific sodium pyrophosphate salt. Substance identification (Qualitative). Verify the recognised chemical name, salt form and item code. The report must correspond to the lot received. Record the sample ID and method revision for repeat testing.
Interpreting the results
Compare release behaviour under the same test method, then examine the finished crumb. A single final volume can hide different release profiles.
