Set up the comparison

Match active propionate on the same basis and record the sodium and calcium contributions. Compare solubility and processing behaviour with the original formula.

Measurements to record

pH (Dimensionless). The value applies to a 10% aqueous solution. Record finished-product pH separately. Sodium propionate assay (% by mass). State dry or as-received basis and check the sodium contribution. Record the sample ID and method revision for repeat testing.

Interpreting the results

For dough applications, review fermentation and the shelf-life result in the intended pack as well as the salt substitution.

What to record

  • Salt form
  • Active propionate
  • Ion contribution
  • Processing result
  • Control sample
