Set up the comparison
Record mass fraction, net mass and delivered price. Calculate active gluconic acid mass and account separately for water carried in with the solution.
Measurements to record
Gluconic acid content (% by mass in solution). Jungbunzlauer food-grade gluconic acid example. Request the quoted concentration and the calculation method for free or total acid. Color stability (Color difference or color value). Use the actual contact medium, packaging and thermal history to distinguish inherent colour from changes during processing. Record the sample ID and method revision for repeat testing.
Interpreting the results
Compare applications at equal active acid, including the effect on the recipe’s water balance.
