Set up the comparison

Cool samples of equal concentration in identical containers under two realistic cooling profiles. Record the other dissolved solids, the time when crystals first appear and any change in mouthfeel.

Measurements to record

Loss on drying (%). Check sieve fractions and moisture separately; caking is not a quantitative moisture measurement. Particle size distribution (µm or % sieve residue). State sieve opening and percentage passing. For fine or agglomerated material, specify dispersion and sieving procedures. Record the sample ID and method revision for repeat testing.

Interpreting the results

Hold solids and the cooling profile constant when comparing grades. Note initial seeding, surface crystals and cracking rather than attributing recrystallisation to purity alone.

What to record

  • Solids
  • Dissolution temperature
  • Cooling profile
  • Observation time
