Why total I+G content alone does not determine seasoning grade

Set up the comparison

Request separate IMP and GMP results, commercial assay and carrier details. Test the candidate in a base with the same MSG concentration.

Measurements to record

IMP-to-GMP ratio (%). Confirm how wet basis, dry basis and blend ratio are calculated before checking the two components. Nucleotide assay (% on a dry basis). State the IMP:GMP ratio and recalculate the active quantity on an as-received basis. Record the sample ID and method revision for repeat testing.

Interpreting the results

Calculate cost per kilogram of active nucleotide using the individual assays and actual solids, then compare the sensory result.
