Set up the comparison
Ask for the main glycoside profile. Adjust the samples to similar perceived sweetness before blind tasting and record the onset, peak and decline separately.
Measurements to record
Principal glycoside composition (% on a dry basis). Identify the chromatographic reference standard and carrier. Total glycosides do not establish the proportion of the main individual glycoside. Carrier-to-active ratio (% by mass). List carriers and proportions, the basis for active content and the corresponding test report. Record the sample ID and method revision for repeat testing.
Interpreting the results
Compare chromatograms and standardising carriers between lots. Use an approved sample in the same base to check whether equal total glycosides still give a different aftertaste.
What to record
- Major glycosides
- Addition rate
- Peak sweetness
- Time to fade
- Aftertaste
